Plus is part of a larger universe were shape-changing magic is slightly more common.
And is heavily hinted any magic considered dangerous is heavily suppressed unless is in control of the Clock Tower.

So... while it is not that you cannot find such stories, it is that they would be far rarer than in a series that *does* specifically have transformational means, be it magical or otherwise.
Shrugs, I am not really against it or for it in a story (I actually have read that one with Shirou that had one chapter of him in ZNT as female), though I fail to see it as a plot point in and of itself being strong enough for me to want to read something on that alone.
She is the main character of the original Fate/stay night novel. It was felt that she would not appeal to the target audience of the visual novel, so she was dumped in favor of Shirou to be more appealing. In Prototype it is revealed that her older sister Manaka Sajyou along with her father Hiroki Sajyou died eight years ago in the previous Holy Grail War.
