Akane better at martial arts then generally thought?

That's her downfall against Kodachi right there (the underlined parts). Do you think that Akane could handle what Kodachi did during her match against Ranma? In addition to that, all she needs to do is throw something at her that will release sleep or paralysis powder (and she just happened to have a bouquet of roses that released paralysis powder when she paid Akane a visit, so she's likely to have something like that on her at any time), not necessarily because it was intercepted. Between that, Kodachi's longer range, versatility and agility, Akane's likely only going to be saved by the circumstances/author.

Plus, Akane's hardly all that durable. She's sprained her ankle twice by the time we get to Kodachi's introduction story. Sure, she has the strength to punch through a stone wall, but her body's not conditioned to take that kind of punishment without injury. Kodachi could conceivably ensure the upper hand just by snagging her ankle with her ribbon and yanking it out from under her, which is very possible if we believe that Akane is not very mobile. In reality, Akane's very much at the mercy of a fighter of Kodachi's style, even in an honest fight. That's why I think it would be more based on luck whether Akane wins: partly due to Kodachi's personality, and Akane -- being the lead girl -- not being susceptible to death or grievous injury from things like razor hoops and spike clubs.

Exactly. And if you look at how other characters deal with similar situations(the few hints we get), Akane suddenly looks better than a bunch of "superior" fighters(who, in 1 on 1 with her probably IS superior).

The number of opponents is next to irrelevant, though. What it really comes down to is the skill of the individual. I wouldn't assume that Akane having an easier time with multiple opponents is significantly attributed to how good she is, than it is about how good they are in a group where they all aim to achieve the same thing that they don't want others in the group to achieve. Plus, you have to keep in mind that pretty much the only multiple threat that she really handled were also trying to "woo" her, not send her to the hospital or worse, and then they might also be holding back simply because she's a girl. If it's not their own personal skill lacking in comparison to her own, there's probably one or both of the aforementioned things decreasing their potential output.

I also don't understand how Ranma is good/specializes at one-on-one fighting. He does quite terribly, often enough. He doesn't seem to be particularly bad at fighting multiple opponents, either. For example, when he chased Cologne to the bath so he could try to take the Phoenix pill from her, he took out at least four opponents around him at the same time before taking care of another that had hung back and breathed fire.

That is definitely not what it looks like.

And again, this excuse is used in regards to Akane, and only her(usually), without actual evidence or even indication of such.

Of course it doesn't look like it. It's Ranma 1/2, not reality, and doesn't make any claims that its content will make sense or be a literal representation. A lot of what we see is meant to have an effect on us, not necessarily the characters. While we can see one guy with a barbell, which we might assume would crush Akane's skull in sooner than it would make her heart flutter with delight, we also see such weapons as a yo-yo and kendama. Nope. Akane has to wonder how she manages to win against Kuno every morning (while standing out in the hallway with Ranma), and later on she tells Ranma, "When he battles a male opponent, upperclassman Kuno is very skilled."

In regard to Ranma in particular, he has said, "Beating girls isn't my style," during his fight with Kodachi, which was why he tried to knock her out of the ring. When it came to Pink and Link, being targeted by girls in specific, he said, "Doesn't feel right fighting back."
