There is the option to try to pair her up with Taro, who appears often enough in the manga to almost be labelled a semi-recurring character.
The reasoning behind choosing him is that during the various times he's been in Nerima circumstances have led to him just about rubbing every major character the wrong way, with the notable exception of Ukyo who amazingly enough, has never met him.
Despite having a superiority complex and something of a petty, vengeful nature (the latter a characteristic of half the Ranma cast), Taro is shown in his saving random female strangers that he does have an altruistic side. Plus, we see when Ranma tries to fool her into leaving the Tendo house during the Secret Sauce storyline, that Ukyo while not exactly content with, is tolerant of guy's behaving like jerkasses.
Ukyo tends to abhor incompetence. Think of her anger and impatience at Ryoga's poor direction [Vol. 9, Vol. 27] or Ranma, Konatsu and Akane's efforts to run her shop [Vol. 36]. Taro's one of the most competent characters in the manga. She's aware of Jusenkyo curses, and while a winged minotaur is not the same a girl or a panda, she's displayed no fear or revulsion to any of the cursed characters she's encountered.
Also, they're birds of a feather in that the pair are quite selfish and can let their own desires make them behave in some truly appalling ways [Ukyo, Vol. 25 & Taro, Vol. 18].
And to top it off, in fanfic Ukyo's usually coupled with aqua-transsexual Ranma, or with either of the
very convincing crossdressers Tsubasa or Konatsu. Taro's easily the most effeminate looking guy after that trio, so it makes total sense!

There are plenty of reasons why they'd incompatible too, such as Taro being several magnitudes more a jerk than Ranma could ever hope to be, the fact that he doesn't appear to respect the sanctity of life a whole lot and that one pooly timed splash of water indoors and he'd destroy her shop.
Taro's quite fond of self-pity [Vol. 23], something that she has little tolerance for.
Also, Taro appears to live in China, only flying to Japan when he has an agenda. He may not want to be tied down there. Then again, without her own interest/claim on Ranma, there may not be too much keeping Ukyo in Nerima.
Several differnces and problems exist in the ship, true, but those would be for the writer to overcome.
Or alternatively you could just pair her with Mikado and call it a day.
