Shadow Chronicles has two Ranmas in the initial story. It didn't turn out too well (granted, there was no mental reprogramming involved, and both Ranmas still wanted Akane).
That isn't really a solution, as it solves everyone
else's problem, but not Ranma's.

That really wouldn't work with Tatewaki Kuno. Even without remembering her, Kuno would still act the same way towards Akane (as evidenced in the watermelon island story).
How about a Quantum Leap approach? It would work in two ways: have Sam Beckett go back in time and fix Ranma's problems for him. In order to avoid a mary-sueish situation where an outsider suddenly solves everything, have Beckett FAIL (or partially fail). Instead, Ranma gets the chance to see his own future, and when he gets back in time he builds upon what Beckett started.
The exact fixes would depend on what period of Ranma's life Beckett falls in, and what
specific future he's trying to alter. For example, if he lands somewhere in the middle of the series when all the major fiancees have appeared, Beckett can choose to outsmart Cologne and try to fix up Mousse and Shampoo. Maybe he can reunite Ukyo with her father, then somehow get the Kunos institutionalized. If the future thurns out having Ranma unhappily married to Akane, maybe Beckett can get the engagement transferred.
